Flight of Flavours Menu

Indulge in an exquisite high tea experience for $75 per person.

Curated by Chef Donna Resuello and her culinary team, high tea is served in three delightful stages. 

Begin with a savoury tier featuring smoked salmon parfait, leek and courgette finger sandwiches, and a chicken sausage roll with cherry relish. Next, enjoy scones with brown sugar cream, strawberry and rhubarb jam, and from our very own hotel rooftop bees, honey madeleines.

Conclude with show-stopping sweet treats like rum and vanilla candele, honey panna cotta, and a lemon-shaped cheesecake. Choose from a selection of teas or add a glass of bubbly for an exquisite afternoon.

The Aviary cocktail menu features innovative drinks crafted with clarified plant-based milks and creams. The Grand Colada, a lighter take on the classic piña colada, features clarified coconut cream infused with pandan.

Serenity Shores combines clarified almond milk and golden falernum, creating a spiced rum chai latte perfect for evening indulgence. Don't miss Me 'n' U, a coffee and white chocolate cocktail that was a 2023 Campari Red Hands finalist, inspired by the flavours that bring people together.
